Pistachio Butter Protein Cookies

These pistachio butter protein cookies are a guilt-free, better for you alternative to your usual chocolate chip cookies. Not only are they clean, with no refined sugar and high in protein, they taste just as good as a regular cookie if not better! No refrigeration is required so you can bake and indulge in these cookies in 30 minutes or less!



  • 1/2 cup or 1 stick butter, softened
  • 1/2 cup Peppertux Farms Unsweetened Pistachio Butter
  • 1/2 cup maple syrup or any other liquid sweetener
  • 1 egg
  • 1 tbsp vanilla extract
  • 1 2/3 cups pistachio flour (can sub almond flour)
  • 1/4 protein powder
  • 1 tsp baking soda
  • 1 cup sugar free dark chocolate chips
  • Sea salt to taste and to sprinkle on top


  • Preheat oven to 350 degrees Fahrenheit.
  • Add all the dry ingredients to a bowl and stir until well combined: butter, Peppertux Pistachio Butter, maple syrup, egg and vanilla.
  • In a separate bowl, combine all the wet ingredients: pistachio flour, protein powder, baking soda and salt.
  • Fold in the chocolate chips.
  • Scoop the cookie dough onto the baking tray (we use a 1” ice cream scoop), 2” apart.
  • Bake for 7 minutes, then remove the tray from the oven and tap the sheet on the counter to deflate each cookie.
  • Return to the oven and bake for another 3 minutes. Repeat the tapping of the tray on the counter a few more times until the cookie is completely flat.
  • Bake for 1 more minute, sprinkle sea salt on top of the cookies and let them rest/cool on the tray for 15 minutes. Enjoy!
