Pistachio Pesto Chicken Sandwich (Panini)

Bored of your usual chicken sandwich? Spice things up with this Pistachio Pesto Chicken Sandwich! It’s got juicy chicken, a generous slather of nutty pistachio pesto, and enough flavor to make your taste buds do a happy dance. Say goodbye to boring lunches!

INGREDIENTS

  • 2 pieces, chicken breasts or thighs
  • 3 tbsp Zeytin Extra Virgin Olive Oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, finely diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 slices bread
  • Sliced tomatoes
  • Sliced mozzarella cheese
  • 3 tbsp pistachio pesto, recipe here
  • 1 tbsp melted butter (optional)

INSTRUCTIONS

  • In a large bowl, marinate chicken by adding olive oil, lemon juice, diced garlic, Italian seasoning, salt and pepper. Toss to coat and marinate overnight (for the most flavor - you can marinate for as little as 2 hours).
  • Grill the chicken over medium-high heat, about 3-5 minutes per side (or until golden brown and cooked inside). Set aside.
  • Prepare the sandwich by placing chicken, tomato, mozzarella cheese. Spread a generous amount of pistachio pesto using Peppertux Unsweetened Pistachio Butter inside the bread and melted butter on the outside.
  • Using a panini maker, press down on the sandwich for 2-3 minutes to melt the cheese slightly. Enjoy!
