Pistachio Butter Cups

Upgrade your peanut butter cups by filling your chocolate candy with pistachio butter instead! This is the true pb cup - ditch the peanuts and jump to pistachios, aka the rich man's peanut butter ;)

MINI PISTACHIO BUTTER CUPS RECIPE

INGREDIENTS

  • Peppertux Farms Pistachio Butter or Cream. Any of the following would work for this recipe:
    • 1/2 cup Peppertux Farms Unsweetened Pistachio Butter + 4 tbsp powdered sugar
    • 1/2 cup Peppertux Farms Original Pistachio Butter
    • 1/2 cup Peppertux Farms Vegan Pistachio Cream
  • 2 tbsp softened butter
  • 16oz dark chocolate chips, melted
  • Optional: chopped pistachios to garnish

INSTRUCTIONS

  • Line a mini muffin tin with cupcake liners.
  • Melt chocolate and fill each liner ever so slightly, just barely enough to fill the bottom of each cup. Place in freezer for 15 minutes.
  • In the meantime, whip Peppertux Farms Pistachio Butter or Pistachio Cream with softened butter (and powdered sugar if using Unsweetened Pistachio Butter).
  • Place a teaspoon of the pistachio filling into each cup of the muffin tin. Place in freezer for about 10 minutes.
  • Fill the rest of the muffin liners with the remaining chocolate. Freeze again for 10 minutes to solidify the upper most layer of chocolate.
  • Enjoy at room temperature for the best texture.
