These pistachio energy bites (a.k.a. a rich man's peanut butter energy balls) are the perfect snacks to enjoy on the go. They are refined sugar free and high in protein.
PISTACHIO ENERGY BITES RECIPE
INGREDIENTS
- 1 cup rolled oats
- 1/2 cup ground flaxseed meal
- Either of the following works for this recipe:
- 1/2 cup Peppertux Unsweetened Pistachio Butter + 1/2 cup maple syrup
- 3/4 cup Peppertux Original Pistachio Butter
- 1/2 cup chocolate chips
- 1 tsp vanilla extract
- Optional: Chopped pistachios
INSTRUCTIONS
- Combine oats, flaxseed meal, Peppertux Pistachio Butter (+ maple syrup if using unsweetened), chocolate chips and vanilla extra in a bowl. Add chopped pistachios if desired.
- Form into 1” balls.
- Arrange on a baking sheet and freeze for 30 minutes. Enjoy!
