Gluten Free, Sugar Free, High Protein Pistachio Brownies

These pistachio butter brownies are super decadent and deliciously rich, but also happen to be gluten free, grain free, refined sugar free and uber high in protein! No one can tell that these are secretly made with chickpeas to increase its nutritional value and protein count. Approved by people of all ages, including picky toddlers!



  • 1 can, 15oz chickpeas (drained and rinsed)
  • 1/2 cup Peppertux Unsweetened Pistachio Butter
  • 1/2 cup maple syrup
  • 1 tbsp Zeytin Olive Oil or coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup pistachio flour (can sub with almond flour)
  • 1/4 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • Salt to taste
  • 1/2 cup chocolate chips


  • Preheat oven to 350 degrees Fahrenheit.
  • Using a food processor, blend all the wet(-ish) ingredients together: chickpeas, Peppertux Unsweetened Pistachio Butter, maple syrup, Zeytin Olive Oil, vanilla extract together.
  • Then blend in the remaining dry ingredients: pistachio flour, cocoa powder, baking powder, baking soda and salt. Note: you may need to scrape down the sides a few times to ensure all ingredients are blended smoothly.
  • Remove the blade of the food processor and mix in chocolate chips using a spatula - reserve a few chips to garnish on top if desired.
  • Bake for 22 minutes and enjoy!
