INGREDIENTS
- 16oz mascarpone cheese
- 1 jar Peppertux Vegan Pistachio Cream
- 1/2 cup heavy cream
- 1 cup brewed coffee
- 1 package lady fingers
- Optional
- 3 table Peppertux Pistachio Cream
- chopped pistachios and/or
- pistachio flour to garnish
INSTRUCTIONS
- Using a handheld mixer or stand mixer, whip mascarpone cheese and Peppertux Pistachio Cream.
- Add heavy cream and beat until fluffy.
- Soak ladyfingers in coffee. Layer half the cookies on an 8” x 8” cake pan.
- Pour half the pistachio cream mixture on top. Drizzle Peppertux Pistachio Cream on top.
- Place the remaining half of the cookies on top, along with the remaining half of the pistachio cream mixture.
- Drizzle more Peppertux Pistachio Cream and garnish with chopped pistachios.
- Refrigerate for at least 4 hours and enjoy!
